- 150 gr anillas de calamar
- 2 filetes de merluza ( sin piel y espinas )
- 1 pimiento verde pequeño
- 1 tomate maduro pequeño

- 3 cucharadas aceite de oliva
- 1 cucharadita sal
- 1 cucharadita pimienta blanca
- 1 cucharadita azafrán molido
- 1/2 vaso vino blanco
- 2 vasos y 1/2 agua
- 200 gr pasta especial fideuá

- Empezamos limpiando el pimiento, el tomate y los ajos, lavamos, troceamos y reservamos un momento. A continuación lavamos las anillas de calamar, dejamos escurrir, también lavamos y troceamos los filetes de merluza, escurrimos también y por último las gambas, las lavamos, le quitamos la cabeza y la piel, dejamos unas cuantas con piel y cabeza, para adornar un poco nuestra fideuá y las cabezas de las otras las reservamos para el sofrito, le va a dar un sabor estupendo.
- Ahora ponemos una paellera, cazuela... lo que queráis al fuego con el aceite, cuando esté caliente añadimos el pimiento, el tomate y los ajos que hemos troceado, removemos muy bien, añadimos las cabezas de las gambas, mezclamos todo y las aplastamos con la ayuda de una espumadera, para que suelten todo su jugo, removemos muy bien y dejamos sofreír durante 15 minutos, a fuego medio
- Pasado este tiempo retiramos las cabezas de la paellera, añadimos las anillas de calamar, las gambas peladas y las que hemos dejado sin pelar, los filetes de merluza troceados y los guisantes, removemos, añadimos el vino blanco,el agua, la sal, la pimienta blanca y el azafrán molido, removemos muy bien y dejamos cocer todo durante 20 minutos.

- Una vez pasado los 20 minutos, añadimos la pasta fideuá a la paellera, colocamos encima de la pasta, las gambas que no hemos pelado, removemos con mucha suavidad y dejamos cocer de 5 a 8 minutos a fuego medio, intentaremos no remover, esta pasta se cuece muy pronto.

- Pasado este tiempo retiramos del fuego, dejamos reposar un par de minutos y ya la tenemos lista, para servir en un plato. Hemos terminado !! A disfrutar de nuestra fideuá !!
