- 2 puerros
- 2 zanahorias pequeñas
- 4 champiñones, 600 grs. de chipirones
- 400 gambas
- 450 gr fideos gordos
- 1,2 l caldo de pescado
- 1 sobre del paellero
- 12 granos de pimienta negra
- ñora
- tomillo
- romero
- sal

- Para el caldo de pescado(fumet): Poner a cocer todos los ingredientes 30´aprox..Desespumar cuando sea necesario.
- NOTA:Si no te encuentras en la Comunidad Valenciana no encontraras morralla, sus tituir la morralla por cabezas y espinas (merluza, rape, rodaballo,etc) que normalmente te las regala el pescatero.
- Saltear en una paellera con 1 poco de aceite las gambas (sin llegar a hacerlas), retirar. En el mismo aceite saltear el chipiron cortado en trocitos, retirar el chipirón.
- Poner a pochar en la paellera la chalota, puerro, zanahoria(Todo cortado a daditos). Cuando este medio pochado añadir añadir el pimiento en daditos.Cuando este casi pochado añadir el champi cortado en daditos.Añadir el sobre del paellero, ñora, pimienta, tomillo, romero.
- Rehogar en el 2 los fideos, añadirle el caldo de pescado, chipiron, rectificar de sal y dejar cocer 10´- 12´´ (segun diga fabricante fideos). Cuando la fideua este practicamente hecha añadir las gambas.Dejar reposar unos minutos.
