- 1 trozo chocolate en barra (80 gr. aprox.)

- Preparar el café, añadir una tapita de ron y dejar enfriar en un plato hondo
Rallar el chocolate y reservar en la heladera. - Separar las yemas de las claras.
En un bol, batir las yemas con el azúcar hasta que alcance una consistencia cremosa. Añadir la otra tapita de ron y la esencia de vainilla. Agregar el queso en trocitos y continuar batiendo.
Batir las claras a punto nieve e incorporar a la preparación anterior. - Pasar las galletas de lado y lado por el café e ir colocándolas en una fuente. NO remojar para que no se deshagan.
Una vez lista la capa de galletas, verter la mitad de la crema y aprox. 1/3 del chocolate rallado. Colocar nuevamente una capa de galletas pasadas por café y una de crema con la mitad que queda. - Espolvorear el cacao amargo sobre la crema y agregar el chocolate restante.
Cubrir la fuente con alusa y llevar a la heladera un mínimo de 3 horas.
