  1. Bizcochos de soletilla
  2. 250 gr mascarpone
  3. 3 huevos
  4. 90 azúcar
  5. 250 ml café
  6. 1 chorrito ratafia al gusto
  7. Cacao en polvo

  1. Primero hacemos un café de calidad, le incorporamos un chorrito de licor (en este caso lo hice con ratafia) y lo ponemos en una bandeja amplia para que se enfríe. Lo necesitamos frío para que al mojar el bizcocho no se deshaga.
  2. Separamos las yemas de las claras. Montamos estas últimas con la mitad del azúcar y unas gotas de zumo de limón a punto de nieve un poco fuerte.
  3. En otro bol y con ayuda de unas varillas eléctricas montamos las yemas con el resto de azúcar hasta que quede una masa blanquecina y se haya disuelto totalmente el azúcar y no se note. Yo lo tuve unos 10 minutos.
  4. Luego agregamos poco a poco el mascarpone frío y lo incorporamos con una lengua pastelera. Con paciencia manteniendo la textura de crema espesa.
  5. Y después lo mismo con las claras montadas que teníamos reservadas.
  6. Ahora pasamos cada bizcocho en el café por los dos lados y ponemos en la base de un molde. Encima una capa generosa del queso y huevo y repetimos con capa de bizcochos mojados y más queso. A mí no me gusta ponerle en este momento el cacao. Lo filmo a contacto y a la nevera hasta el día siguiente para que coja fuerza.
  7. Al día siguiente, sacamos de la nevera 5 minutos antes de servir, sacamos con cuidado del molde y ahora si, espolvoreamos con cacao. Riquisimooooo!!
  8. También hice uno en formato chupito 😜
