  1. Preparamos el café, opcionalmente añadimos un poquito de esencia de vainilla y un poco de licor (yo he usado licor 43, pero puede ser amaretto u otro que nos guste) y lo dejamos enfriar. Reservamos.
  2. Separamos la yema y la clara del huevo. Montamos la clara a punto de nieve y reservamos.
  3. Batimos la yema con el azúcar hasta que la mezcla se ponga de color amarillo clarito y no se note el grano de azúcar.
  4. Removemos un poco el queso mascarpone, que habremos sacado con antelación del frigorífico, y mezclamos con la yema y el azúcar, lentamente, con movimientos envolventes.
  5. Añadimos finalmente la clara a punto de nieve y la integramos de la misma forma, sin batir, con movimientos envolventes.
  6. Mojamos los bizcochos en el café frío y Los colocamos en la base de un molde rectangular. Extendemos una capa de la crema sobre los bizcochos, cubriendo toda la base. Volvemos a colocar otra capa de bizcochos mojados en el café y terminamos con otra capa de la crema de mascarpone.
  7. Espolvoreamos una fina capa de cacao en polvo, usando un colador, y llevamos a la nevera, dónde lo dejaremos reposar hasta el día siguiente.
  8. Para servirlo, lo sacaremos del frigorífico unos 10-15 minutos antes y lo espolvorearemos nuevamente con un poco de cacao.
  9. Solo nos queda disfrutar de esta delicia.
