- 1 vaso vino blanco

- Macerar el día antes con canela y aceite en una fuente.


- Enharinar la carne y freír con el aceite del macerado. Reservar


- Picar la cebolla y el ajo sofreír y el bouquet, agregar el coñac y la copa de vino dejar evaporar. En un cazo infusionamos tomillo, colamos y reservamos. También ponemos las setas en remojo.


- Incorporar la carne y agregar la agua infusionada y también un poco de agua dejar cocer y pasadas una media hora. Incorporar la setas, yo reservo un poquitín de ese caldito y también se lo agregó.
- Rectificar de sal y pimienta dejar cocer hasta que la carne esté tierna. Dejar reposar.
